Monday Night Promotion Celebration DinnerBox: Two beer-braised Brats over buttered Spinach. Bacon Mashed Potatoes, Eggplant Gratin, Asparagus spears, whole-wheat Spatzle & IKEA Swedish Meatballs.
About a month ago, my Dad flew over to Chicago to visit me and with him was an insulted cooler containing four 16oz. New York Strips, four hunks of hamburger and four thick brats. David and I have eaten through it all, except for the brats. And upon hearing that he received a promotion that day, I decided to cook ‘em up, my version of a German meal using what we had in the fridge. He came home, gooey and drunk off his excitement, gushing about how he was craving a brat. Perfect.
BreakfastBox: Poached Egg w/ leftover Spinach-Tomato Risotto and steamed Baby Box Choy. Side of lemon, because I sprinkle lemon on my life and suck on them thangs all day long.
Thursday Night DinnerBox: Pork Chops, quick brined and pan-seared with cumin and lime, over a bed of Baby Bok Choy, garnished with ripe Avocado and Cilantro. Spinach-Tomato Risotto w/ steamed Asparagus.
Saturday Night DinnerBox: Roasted Chili Rubbed Pork Chops with Spinach and Asparagus Risotto and an Avocado Tomato salad.
